The Importance of Fats

  • Fats are the building blocks for cell membranes and hormones.
  • Fats slow down nutrient absorption so you can go longer without feeling hungry.
  • Fats carry fat-soluble vitamins – A,D,E, and K.
  • Fats are needed to convert carotene into Vitamin A and for good mineral absorption.

Politically Correct nutrition tells us that Saturated Fats (esp. from animal sources) and Cholesterol are bad and are the leading causes of Coronary Heart Disease.

This misinformation is supported and advertised through the vegetable oil and food processing industries.  This is also a popular belief in the fad- diet world (Pritikin).

Low-fat diets are good at first – and people lose weight initially, but end up with mineral deficiencies, depression, and low energy.

Saturated fatty acids make up 50% of the cell membrane – giving the cell necessary stiffness and integrity to function.

Mother’s breast milk is very high in saturated fat and cholesterol – essential for growth and brain development.  It is very bad for children to be on low-fat, low cholesterol diets.

Japanese diet is very high in cholesterol – highest longevity rates in the world.  Following close behind are the Swiss, Austrians, and Greeks – all with very high fat diets.

Most of the fat in our bodies and in the food we eat is in the form of triglycerides – 3 fatty acids chains of carbon atoms and hydrogen atoms attached to a glycerol molecule.

Elevated triglycerides in the blood are liked to high rates of heart disease – but these triglycerides do not come directly from dietary fats – they are made in the liver from any excess sugars that have not been used for energy – from carbohydrates, refined sugar, and white flour.

Today most dietary fats are polyunsaturated vegetable oils from soy, corn, safflower, and canola oils.  These are the sources of 30% of our calories in the modern diet.  This number should be 4% - for better health.

Excess consumption of polyunsaturated oils leads to cancer, heart disease, immune system dysfunction, liver damage, damage to reproductive organs and lungs, digestive disorders, depressed learning ability, impaired growth, and weight gain.

These oils go rancid easily when subjected to heat, oxygen, and moisture – cooking.

Rancid oils produce free radicals in the body – single atoms or clusters of atoms with an unpaired electron in its outer orbit.

Free radicals attack cell membranes and red blood cells causing damage in DNA/RNA strands that can trigger mutation in tissue, blood vessels and skin.

Free radical damage to the skin produces wrinkles, in the tissues and organs it sets the stage for tumors (cancer), and in the blood vessels it initiates the buildup of plaque.

Free radical damage is linked to Arthritis, Parkinson’s, ALS or Lou Gehrig’s, Alzheimer’s, and cataracts.
